"Orange carrot," whose color turns vivid orange all the way to the core, is developed by Takii Seed asone of a series of vegetables that contain functional compounds abundantly, "Phytorich." It has a thin skin and is characterized by a herb-like freshness felt within its sweetness. While having sugar content high enough to be used for juice, drying tidies the sweetness up cleanly, anda flavorful finish where the herbal aroma stands out. Carrot aroma compounds include sesquiterpenes and pinene, components close to herbs. Low-temperature drying makes it easy for these components to remain, allowing flavor design that makes the most of a herbal aroma. The Orange variety is especially rich in aroma compounds, making it a variety well suited to drying.
