  • Low-temperature drying keeps the flavor plump and fragrant

Kujo green onion, a representative Kyoto vegetable. Its melt-in-the-mouth tenderness and the sweetness that spreads the more you chew. Agriture slowly dries Kyoto-grown Kujo green onion, carefully raised in Kyoto, at low temperature to draw out its color, aroma, and flavor to the fullest. There is almost none of the pungency characteristic of green onions, and you can savor, chew by chew, the sweet umami unique to Kujo green onion. Another appeal: when heated, it becomes tender and offers a corn-like flavor not found in fresh Kujo green onion.

Features

Made with Kyoto-grown Kujo green onion

We use Kujo green onion, a Kyoto heirloom vegetable. Its features are tenderness and strong sweetness, and that flavor comes through firmly even after drying. It can be used in a wide range of commercial applications such as ramen, Japanese delicatessen, frozen foods, and seasoning ingredients.

Features

Large-lot supply also supported

With a supply track record of several tons per year, we can also accommodate ongoing commercial procurement. We flexibly handle everything from spot orders to recurring transactions. You can use it with peace of mind for product design premised on stable supply and for long-term menu adoption.

Features

A process that draws out sweetness through low-temperature drying

By slowly drying at low temperature, we draw out the sweetness and aroma characteristic of Kujo green onion to the fullest. The pungency is mild, and when heated it rehydrates plumply, spreading a natural sweetness. Though a dried ingredient, its feature is a rich flavor different from fresh.

Kyoto heirloom vegetable, Kujo green onion

Known as a Kyoto heirloom vegetable, Kujo green onion features tender leaves and a natural sweetness that spreads the more you chew. Nurtured by the Kyoto basin’s characteristic temperature swings and fertile soil, it has little pungency and a fragrant flavor, and has long been cherished as an ingredient essential to Kyoto cuisine.

Because the leaves are thick and contain a lot of moisture, they take on a soft, melting texture when heated, making the umami stand out. Careful cultivation and selection continue to this day, and even after drying you can firmly sense the original sweetness and aroma of Kujo green onion—a vegetable highly regarded as a commercial raw material.

How consultation works

Inquiry / materials request

First, please feel free to contact us via the inquiry form or by phone. We welcome you even at the stage of “I want to know what kind of processing is possible” or “I want a rough idea of the price.” After you contact us, our staff will send you materials and take time to hear about your situation.

If you can give us a rough idea of the raw materials you currently have, the product image you are aiming for, and your sales destinations, our subsequent proposals will go smoothly. Please feel free to reach out with the mindset of simply “giving consultation a try.”

Consultation / meeting

Based on the content of your inquiry, we will talk in detail with our staff. Online or by phone, we carefully ask about points such as “what ingredients you want to use,” “what kind of product you want to make,” and “what your sales destinations and expected lots are.” At this stage, it is fine if some things are undecided.

While introducing the ingredients we handle and our processing track record, we will organize the direction together. As needed, we will also present proposals for processing methods and specifications and a quote at this time.

Prototype production / sample shipment

Based on the content of the consultation, we actually produce samples. While adjusting fine specifications such as drying temperature, cut size, and blend ratio, we aim for a finish close to your image. After you review the sample, we repeat prototyping multiple times as needed, incorporating feedback such as “make the texture a little softer” or “make the color more vivid.”

We handle this carefully until the finish is satisfactory, so even those tackling product development for the first time can feel at ease. We will inform you of the prototyping cost in advance.

Full production / product development

Based on the specifications confirmed in prototyping, we begin full production. After finalizing the production quantity, delivery date, packaging specifications, and more, we adjust the schedule. We maintain thorough quality control during production and respond with a consistent management structure so there is no unevenness in the finish. Finished products are inspected and delivered in the specified format.

Even after the first production, we flexibly handle requests for additional orders and specification changes, so we have a structure in place for a long-term partnership. Please feel free to consult us about lot adjustments to match sales after commercialization.
