Dried Kyo-kurenai carrot

Dried Kyo-kurenai Carrot: product overview
"Kyo-kurenai carrot," characterized by a glossy, vivid red color and rich sweetness, is adeveloped by Takii SeedPhytorich variety. A Japanese-born carrot created by crossing gosun carrot and kintoki carrot,it is also appealing for containing lycopene, the source of its vivid color.
Dry processing makes the sweetness that lurked deep in the moisture stand out, changing it into a rich, sweet flavor. Because the flesh is fine-grained and densely packed,a texture with more eating satisfaction than rawcan be enjoyed. The aroma is restrained and the sweetness remains firmly, making it excellent as a sweetening material too. Of course for snack uses and vegetable sweets, but italso pairs well with prepared-dish development combined with saltiness—a highly expressive material.
Three commitments Agriture values
01 Functionality unique to a Phytorich variety
Kyo-kurenai carrot is a Phytorich variety developed by Takii Seed. Containing lycopene inherited from kintoki carrot, it can be proposed as a material with a character distinct from ordinary gosun carrots.
02 Vivid red color and concentrated sweetness
The red color does not fade even when dried, giving impact to the product's appearance. The sugar content concentrates further through drying, making it active as a sweets material too.
03 Eating satisfaction from densely-packed flesh
The fine-grained, dense flesh has a firm chew even after drying. It shows its presence in prepared dishes such as rapee and shirishiri.

Six reasons to choose Kyo-kurenai carrot
Grown by partner farmers in the Kyotango area, known as a growing area for Kyo-kurenai carrot. Winter temperature swings draw out the sweetness.
A Phytorich variety developed by Takii Seed by crossing kintoki carrot and gosun carrot. A functional raw material containing lycopene.
After rehydration it is moist, with an eating satisfaction where you feel the flesh's density more than raw carrot. Ideal as a prepared-dish and deli material.
With a well-balanced aroma and rich sweetness, it is an easy material to fashion into carrot cakes, baked goods, and dried-fruit-feel products.
The raw material is 100% carrot. Without adding sugars or colorants, we deliver the ingredient's natural sweetness and color as-is.

Agriture's low-temperature drying technology
At Agriture, to make the most of Kyo-kurenai carrot's character, we use our own drying process that draws out moisture slowly at low temperature. It takes more time than high-heat drying, but the greatest merit is being able to treat the ingredient's color, aroma, and nutrition with care. Finely controlling the three factors of temperature, humidity, and airflow lets us draw an optimal drying curve for each ingredient—a feature of Agriture's low-temperature drying.
Raw material delivered from partner farmers is processed on an integrated line—washing, cutting, and drying—all on the same day. While reducing raw material loss, we lock the fresh flavor into the dried product. Being able to keep the time from harvest to processing short is a strength that comes precisely from having a processing base in the growing region of Kyoto.
We check the moisture value and color tone of each processed lot one by one, shipping only those that meet quality standards. Even for commercial lots, because we check on both visual and measurement fronts, the Kyo-kurenai carrot finish can be delivered at stable quality.
Because Kyo-kurenai carrot contains lycopene, it is a material whose pigment degrades easily if dried for a long time at high heat. By drawing out moisture slowly at low temperature, we concentrate the sweetness while protecting the red color and lycopene.
Use scenes and OEM case studies
Dried Kyo-kurenai carrot is used across a wide range of business types, from food makers to restaurants and EC mail-order brands. Beyond menus that make the most of the ingredient as-is, adoption is spreading as an OEM raw material for processed foods, seasonings, and blend products. Here we introduce representative use cases.
Carrot cake and baked goods
A use easy to adopt as a material for mixing into dough at baked-goods and Western-confectionery makers and OEM contract factories. Fresh carrot's moisture-content variation affects the dough's finish, but with the dried product, because the moisture value is stable, it is easy to keep the accuracy of the blend design constant, and it also saves in-process prep man-hours. Because the sugar content is concentrated, there is room to adjust the added-sugar amount, and beyond carrot cake it can be put to use in OEM of muffins, scones, and baked-goods gifts.
Rapee, shirishiri, and deli salads
A use scene easy to adopt as a colorful side-dish material at delica / prepared-food makers and boxed-lunch OEM. The peeling and julienning steps for fresh carrot are a heavy work burden at volume production and yield variation is also a challenge, but with the dried julienne type, room-temperature bulk storage and fixed-quantity use are possible, and just rehydrating in water and dressing with salt, vinegar, or oil finishes into rapee or shirishiri where the vivid Kyo-kurenai color shows. With the quality stability unique to contract-grown raw material as an appeal point, it can be put to use in differentiating deli salads and boxed-lunch side dishes.
Vegetable sweets and dried-fruit-style products
In product development for health-oriented EC brands and souvenirs, cases of adopting dried vegetables as a material eaten as-is are increasing. Unlike fresh carrot, because prep and refrigeration management are unnecessary, product tests can be done from small quantities, and being able to handle room-temperature distribution even after packaging is supported by small-lot-rollout makers. It can be provided in specifications matched to your requests for shape and thickness, as a material for snacks and baked goods that make the most of Kyo-kurenai carrot's characteristic vivid red-purple color.
Coloring soups and potages
In OEM production for food makers and convenience-store soups, it can meet the need to express natural redness and sweetness without using colorants. In potage processing with fresh carrot, color tone and sugar content tend to vary each time prep is done, and in-process quality control takes man-hours, but with powdered dried raw material, room-temperature bulk storage and fixed-quantity addition are possible, contributing to stabilizing color tone across lots. Because small-lot prototype support can also be discussed, it can be put to use from the consideration stage of new-line launches and seasonal-limited products.
