Momotaro-type large-fruited varieties grown in Kyotango, Kyoto Prefecture, harvested fully ripe. We use only those whose flesh has developed full sweetness.

High-sugar tomatoes are difficult to process into powder, and at present we do not offer a distributable powder product. If you are looking for a vegetable powder other than tomato, please check the list below.
About the tomato raw material
Agriture's dried tomato is procured through long-term relationships with partner farms within Kyoto Prefecture. By managing everything down to the growing region, grower, and variety in a linked way, we have built a system to deliver commercial raw material of stable quality every year.
Variety:Large-fruited variety (Momotaro type)
Producer:A partner farm (partner farm) in Kyotango, Kyoto Prefecture. Centered on melon, watermelon, and tomato, it continues cultivation dedicated to fully ripe harvest.
Growing region:Kyotango, Kyoto Prefecture. The climate with the temperature swings and sea breeze of the Sea of Japan side nurtures fully ripe tomatoes rich with sweetness.
Cultivation method:Open-field and greenhouse cultivation by partner farms. Harvested after fully ripening, and even peak-season tomatoes that spoil easily are used without waste through drying.

Agriture's low-temperature drying technology
At Agriture, to make the most of the tomato's character, we adopt a proprietary drying process that draws off moisture slowly at low temperature. It takes longer than high-temperature drying, but the greatest benefit is being able to cherish the ingredient's color, aroma, and nutrients. By finely controlling the three of temperature, humidity, and airflow, we can draw an optimal drying curve for each ingredient — that is the feature of Agriture's low-temperature drying.
Raw material delivered from partner farmers is processed on an integrated line—washing, cutting, and drying—all on the same day. While reducing raw material loss, we lock the fresh flavor into the dried product. Being able to keep the time from harvest to processing short is a strength that comes precisely from having a processing base in the growing region of Kyoto.
For each processed lot, we check moisture value and color tone one by one and ship only those meeting quality standards. Even for commercial lots, we check on both visual and measurement fronts, so the tomato finish can be delivered at stable quality.
High-sugar tomatoes are an ingredient prone to scorching and caramelization if dried all at once at high heat. By taking time slowly at low temperature, the sugars do not scorch, and the finish keeps a fruit-like sweetness even after rehydration.

Dried tomato is used across a wide range of business types, from food makers and restaurants to e-commerce mail-order brands. Restaurant appetizers and hors d'oeuvres
A use adopted as a standard appetizer ingredient at restaurants and hotel buffets serving Italian and Mediterranean cuisine. Fresh tomatoes have short prep shelf life and readily incur disposal risk, but dried tomato can be stably held as shelf-stable stock and, simply rehydrated in olive oil, extends immediately to caprese and marinade. Its concentrated umami and vivid color raise the completeness of the plate, and it is easy to work into hors d'oeuvre spreads with many small items.
Pasta sauce and chilled pasta

Because the concentrated umami and acidity are maintained even after heat cooking, it becomes a point of differentiation as a flavor ingredient for ratatouille, pasta-style side dishes, and mixed prepared foods. Q1. What is the minimum commercial lot?
We handle orders from 10 bags (100 g per bag). We also accept small-lot inquiries for test adoption.
Q2. Can the cut spec be changed?
The standard spec is round slices, but for orders of 10 kg or more we can discuss spec changes such as thickness and dice cut.
Q3. Are there points to watch when rehydrating?
Because the sugar content is high, we recommend rehydrating briefly in lukewarm water. Soaking for a long time lets the sweetness run out easily.
Q4. Are additives or preservatives included?
No glucose or preservatives are used at all. The raw material is 100% tomato, delivering the ingredient's inherent flavor as-is.
Q5. Is there a powder product?
We do not do powder processing, due to the sugar content. For vegetable powders other than tomato, we do carry them.
Q6. Is stable year-round supply possible?
We produce twice a year, in May and October, and if you consult us up to three months before the production timing, we can set up a stable-supply arrangement.
Q7. Can you also advise on developing an OEM product?

Yakuzen properties (for fresh tomato)
In the world of yakuzen, tomato is classified as a heat-clearing ingredient, thought to cool excess heat that builds up in the body and ease thirst. It is a vegetable easy to incorporate when you want to reset a body flushed by heat, or during summer fatigue and loss of appetite.
Its sweet-and-sour taste is also said to help regulate the spleen and stomach and support water metabolism. In seasons when you feel the heat easily, or times when flushing is a concern, gently working it in through salads or chilled soups is recommended.
Compared with fresh tomato, dried tomato has a somewhat gentler heat-clearing action, while its umami and sweetness concentrate instead. It is an ingredient easy to work in not only in summer, when you sweat easily, but also in seasons when you do not want to cool the body too much.
Added to heat-cooked dishes such as soups, mixed rice, and pasta sauce, it lets heat escape faintly while letting you take in umami and nutrients without strain.
