The raw material used for our dried garlic sprouts is germination-stage young garlic shoots sourced directly from domestic contract-cultivation farmers. Harvested in a sprout state including bud, stem, and root, they are brought into our own processing facility in Kyoto while freshness is preserved. Unlike processing that uses only the garlic bulb, using the whole sprout as raw material finishes it into a material with a distinctive flavor and nutrient profile.

Commercial usage and rehydration
The slice type of dried garlic sprouts rehydrates in about 2 to 3 minutes when added directly to boiling water or soup. When used as a ramen topping or soup ingredient, it can be added straight without rehydrating. When using it in stir-fries, soaking it in room-temperature water for about 5 to 10 minutes to half-rehydrate before frying in oil gives a good balance of texture and flavor.
For storage, sealed storage away from heat and humidity is best. Because the garlic-derived odor component is strong, beware of odor transfer to other ingredients, and management in an airtight container or a dedicated storage location is recommended. Using it up promptly after opening, or reducing air contact with a zip-lock bag, preserves quality longer.

A. By adjusting the drying profile, control is possible from strong flavor to a mild finish. You can confirm the direction of the finish at the prototype stage for cases where you want to raise the aroma firmly, as in ramen uses, and cases where you want it restrained, as in snack uses.
Q. What is the lead time?
A. Stock items can be shipped 1 to 2 weeks after order. For new processing of customized specifications, prototyping takes 1 to 2 weeks and full production about 3 to 4 weeks as a guide. If it overlaps with the garlic harvest season, we can also discuss moving it earlier.
Q. Can you issue a raw-material origin certificate?
A. We can issue a raw-material origin certificate proving it is domestically grown garlic sprouts. Microbiological test certificates are also issued after case-by-case consultation.

A. Because garlic sprouts differ greatly in moisture content across bud, stem, and root, uniform drying is difficult in whole form.
