Dried strawberry
Dried strawberry (Kyoto-grown) product overview
Fully ripe strawberries carefully grown at our partner farms in Kyoto Prefecture are sliced and slowly dried at low temperature. The finish concentrates the flesh's juiciness and rich aroma, spreading a sweet-tartness that grows with each bite. Strawberry's characteristic bright aroma stands out, and it's a standout for topping and confectionery uses too.
With no sugar or glucose added, the method leverages the ingredient's inherent flavor—additive-free and color-free. Vividly colored even when dried, its premium look is also appealing. We handle both commercial and OEM.
Three points of care in dried strawberry
01 Grown at partner farms in Kyoto Prefecture
We contract directly with partner farms in Kyoto Prefecture and use strawberries harvested after waiting until fully ripe. Only aromatic, sweet-tart fruit is sorted and sent to the processing line.
02 Low-temperature drying that preserves color and aroma
To protect strawberry's characteristic bright aroma and vivid red color, which tend to be lost in high-temperature drying, we use a method that slowly removes moisture at low temperature. Even after drying, it finishes with a premium look.
03 Sugar-, coloring-, and preservative-free
Using no sugars, sweeteners, preservatives, or colorings whatsoever, the only ingredient is strawberry. A design suited to natural and additive-free appeal as a raw material for craft sweets and high-value-added brands.

Characteristics of commercial dried strawberry
Among domestic strawberries, we use Kyoto-grown. For manufacturers wanting to carry regional brand value at the ingredient level, it's a raw material that lets you clearly state the growing region.
A slice shape that leverages the round form as is. Usable directly for topping tarts, cakes, and granola, it suits products with strong visual appeal.
A sweet-tartness and bright aroma that spread with each bite. Thanks to a method that retains flavor even when dried, it also suits use as an ingredient in black and herbal teas and kneading into baked goods.
Using no coloring, it retains strawberry's inherent natural red. A color suited to product design for premium confections and natural-oriented brands.
Available from a minimum lot of 100g. We can support you step by step, from prototyping for small craft-confectionery makers and chocolate shops to the mass-production phase.
Processing into strawberry powder from the same raw material is also possible. It can be applied to product planning that leverages color and aroma—drink bases, baked goods, macarons, marshmallows, and more. It suits uses where you want to blend color and aroma into baked-goods dough, white chocolate, marshmallows, macarons, drink bases, and the like.
Commitments to variety, grower, and growing region
Cultivar:We use strawberries grown in Kyoto Prefecture. We choose cultivars suited to the partner farm's growing environment and source them based on the balance of color, aroma, and acidity after processing.
Producer:We contract directly with strawberry producers in Kyoto Prefecture. Only fully ripe fruit is sorted and delivered to the processing site while highly fresh.
Production area:Kyoto Prefecture. A regional brand with low distribution volume even within the domestic strawberry market, suited to product design where you want to differentiate from competitors.
Cultivation method:Centered on greenhouse cultivation, fully ripe harvest is timed to the April peak. By processing in bulk during the period of high freshness and sugar content, it finishes as a raw material with a sense of season.
Low-temperature drying that protects color, aroma, and a premium look
Strawberry's pigment and aroma components are very delicate, and in high-temperature drying the red darkens and the aroma is easily impaired. Agriture uses a low-temperature drying method, designed to remove moisture while retaining the vivid red and bright aroma. Dried strawberry's characteristic premium look also suits adoption in gift confections and premium products.
Dried strawberry is vulnerable to humidity, so after opening, storing it in an airtight container together with a desiccant helps preserve color and texture. Since it's prone to color transfer, when combining it with white cream or white chocolate, minding the amount used and how you mix it results in a clean finish.
