Can fruit powder be used in place of fresh fruit?

Yes. Especially in sweets where you don't want to add moisture (fresh cream, dough, chocolate), it's a material easier to handle as a substitute than fresh fruit. It can't reproduce the pulpy texture of fresh fruit, but it can carry plenty of color and flavor.

Can it replace synthetic colorants?
