02 Low-temperature drying that draws out sweetness without bitterness
To make the most of the varietal trait of restrained bitterness and grassy smell compared with ordinary bell peppers, we use low-temperature drying. Because high-temperature processing drives off the aroma and sweetness, we take time to remove the moisture, finishing it into a taste easy even for children to eat.

Low-temperature drying that preserves the ingredient's character
To make the most of the flavor, color, and texture of kodomo bell pepper, Agriture uses a drying method that removes moisture slowly at low temperature over time. High-temperature hot-air drying can remove moisture in a short time, but has the drawback that aroma components, pigments, and heat-sensitive vitamins are easily lost. Low-temperature drying can raise the raw material's shelf stability while retaining these components as much as possible, and its feature is that the ingredient's inherent flavor rises up when rehydrated.
The main cause of the grassy smell in bell peppers is a volatile component called pyrazine. The PhytoRich-variety kodomo bell pepper originally has little of this component, and combined further with Agriture's low-temperature drying technology, it's finished into a mild taste that doesn't let the grassy smell come through.

A. Agriture's processing carries out hygiene management in line with the HACCP approach, and you can consult us on dried vegetable raw materials for export as well. Please also consult us on confirming requirements by destination country and label support when you inquire.
