Dried pineapple

Product overview of dried pineapple
Pineapple's appeal is the sweet-and-sour flavor distinctive to tropical fruit. Drying it in particular tightly concentrates the sweetness and acidity, making the fruity aroma stand out all the more. Whether eaten as a snack as is or used as a confectionery material, its refreshing flavor sets off dishes and desserts.
Also, processed into powder, it can be used as a flavor for baked goods and beverages, so it can handle a wide range of product development.
Three commitments Agriture values
01 Using fully ripe pineapple grown in Okinawa Prefecture
Using only fully ripe pineapple delivered from partner farms within Okinawa Prefecture as the raw material, it is peeled and processed into rounds at a local Okinawa processing facility. By shortening the time from harvest to processing, we dry it without letting the aroma of the fully ripe fruit escape.
02 Natural processing with no sugar or glucose
We use no sugar-soaking or glucose-coating, which is common in commercial dried pineapple. It is finished with only the fruit's own sugar and acidity, a raw material also suited to clean-label-oriented dried-fruit OEM.
03 Low-temperature drying that keeps the chew and aroma
Rather than driving off moisture all at once at high temperature, we dry it at low temperature over time. With a moist finish where you feel the juice the more you chew, it is a texture easy to use both as a snack as is and as an ingredient in baked goods.

Characteristics as a commercial raw material
The rich aroma of Okinawa fully ripe pineapple is concentrated in the drying process. The aroma rises the moment the package is opened, finishing into a dried-fruit product with a premium feel.
It achieves both the firm sweetness distinctive to fully ripe fruit and a refreshing acidity that lingers in the aftertaste, making it a perfect match for black tea, coffee, and yogurt.
Because it can be folded into dough without rehydrating, it is a cut specification easy to use as an ingredient for pound cakes, muffins, scones, and bread.
Unlike fresh pineapple, whose season is limited, a dried product allows 6 months of room-temperature storage. It achieves stable raw-material supply year-round and broadens the scope of product planning.
By actively using off-spec fruit and fruit suited to processing uses, we also contribute to solving the disposal challenge Okinawa's producers face.
Specification changes to match OEM development of diverse product categories—snacks, cereals, protein bars, dried-fruit assortments, and more—are also possible.

Low-temperature drying that preserves the ingredient's character
To make the most of pineapple's flavor, color, and texture, Agriture adopts a drying method that drives off moisture slowly over time at low temperature. High-temperature hot-air drying can remove moisture in a short time, but it has the drawback that aroma components, pigments, and heat-sensitive vitamins are easily lost. Low-temperature drying can raise the raw material's storability while retaining such components as much as possible, with the feature that the material's own flavor rises when rehydrated.
