The raw material used in Agriture's garlic sprout powder is young garlic shoots at the sprouting stage, sourced directly from contract-growing farms within Japan. Harvested in the sprout state including shoots, stems, and roots, they're handled from drying through grinding consistently at our own processing facility within Kyoto Prefecture while freshness is kept.

Low-temperature drying technology and quality control

The allicin-family components that make up garlic sprout aroma are heat-sensitive, and high-temperature drying largely loses the garlic-like punch. At Agriture we use hot-air drying that keeps the product temperature in a low range, designed to let out only moisture while curbing the escape of aroma components. We grind it immediately after drying, structuring the process to shorten contact time with oxygen so flavor freshness is preserved.

Manufacturing is done at our own processing plant in Kyoto Prefecture, with integrated management from raw-material acceptance inspection to shipment. It is filled after passing through a foreign-matter removal process, and for OEM projects we issue necessary documents such as specification sheets, raw-material origin certificates, and microbiological test reports, upon consultation for each project.

TIPS | Garlic-sprout-drying trivia

Because garlic sprouts differ greatly in moisture content among the shoots, stems, and roots, they're a material hard to dry evenly in whole form. Even for powder raw material, we finish it into a uniform powder by first cutting it in half or slicing it before drying, then grinding it afterward. The pungency intensity can be adjusted by drying temperature, and multiple profiles can be compared at the prototype stage.

    Points on commercial use and storage

    Garlic sprout powder needs no rehydration and can be used by adding it as is to soups, seasonings, and fillings. When blending it into a liquid, kneading it with a little water or oil first before adding it to the main step helps prevent clumping and lets the flavor reach throughout. In recipes with a heating step, adding a small amount at the finishing stage strengthens the rising aroma.

    For storage, sealed storage away from light, heat, and moisture is best. Because the garlic-derived odor components are strong, watch for odor transfer to other raw materials and we recommend management in a dedicated storage location or sealed container. Use it up promptly after opening, or reduce air contact with nitrogen flushing or a zip bag to keep quality longer.

    Q. What is the minimum lot and prototype handling?

    A. We advise from 1 kg of raw leaf for prototypes and from 10 kg of raw leaf for full production as a guide. From 1 kg of raw leaf, roughly 100–120 g is expected to finish in powder equivalent, along with pungency intensity and sample.

    Q. What's the difference from bulb-garlic powder?

    A. Whereas bulb-garlic powder powders only the bulb, garlic sprout powder powders the whole young sprout at the sprouting stage, including shoots, stems, and roots. Because a sprout-specific grassy aroma and mild pungency are added, it becomes a differentiation material with a flavor different from ordinary garlic powder.

    Q. I'm concerned about the garlic odor. Can it be finished mild?

    A. By adjusting the drying temperature and time profile, the odor intensity can be controlled. We can ship a full-flavor spec and a mild spec in parallel at the prototype stage, so you can confirm the intensity that fits your use.

    Q. What is the lead time?

    A. If stock is available, we can ship within a guide of 2–3 weeks after order. For projects involving new processing, please plan a lead time of 4–8 weeks. Given the timing of the garlic harvest, consulting us the prior year makes it easier to plan stable supply.

    Q. Can you issue a certificate of raw material origin and an analysis table?

    A. For both a raw-material country-of-origin certificate showing it's domestic garlic sprout and a microbial test report, we proceed with issuance after consulting on each project.

    Q. Can it be blended with other vegetable powders?

    A. Yes. However, because the garlic odor is strong, care is needed with odor transfer during blend storage. Please inquire in advance for consultation on blend design.
