Product overview of dried broccoli

This is dried broccoli made with Kyoto-grown broccoli, drawing out its vivid green color and umami. Drying it slowly at low temperature concentrates the vivid green color and flavor and firmly preserves the texture. Its vivid color and bite come alive even after rehydration, and it can be used in a wide range of cooking such as soups, stir-fries, and pasta. No frozen storage is needed, and it can be used efficiently for commercial purposes.

It is a convenient ingredient that adds color and a sense of vegetables as a material for pasta sauces, soups, frozen prepared foods, and processed foods.

Three commitments Agriture values

01 Kyoto-grown broccoli cultivated by partner farmers

Using broccoli delivered from partner farmers within Kyoto Prefecture as the raw material, we dry it while keeping the florets' shape intact. Centered on the seasonal period from autumn to spring, we select and use only broccoli rich in deep green color and sweetness.

02 Low-temperature drying that preserves vivid color

So as not to spoil broccoli's vivid green color and sweet flavor, Agriture uses a drying process that removes moisture slowly at low temperature. A defining feature is that broccoli's characteristic fluffy texture and color remain even after rehydration.

03 No additives, no glucose

We use no glucose coating or preservatives for color fixing or added sweetness. It can be adopted for the OEM development of food manufacturers who want to make the most of the ingredient's natural flavor and color.

Characteristics as a commercial raw material

Concentrated vivid green

Ideal for developing menu photos, frozen prepared foods, and pasta sauces that make the most of vivid broccoli green. Its stability, easier to handle than fresh broccoli, is also an appeal.

Concentrated sweetness and umami

Holds its shape well even when heated

Because the floret shape firmly remains even after rehydration, its visual beauty lasts even when added to frozen gratin, soups, or pasta. Its ease of use is valued in commercial applications too.

Can be used as a substitute for frozen raw materials

Compared with frozen broccoli, it can be stored at room temperature, contributing to reduced procurement and inventory-management costs. Operation that does not rely on the cold chain is possible.

Low-temperature drying that preserves the ingredient's character

To make the most of broccoli's flavor, color, and texture, Agriture uses a drying method that removes moisture slowly over time at low temperature. While high-temperature hot-air drying can remove moisture in a short time, it has the drawback that heat-sensitive elements such as aroma components and pigments are easily lost. Low-temperature drying can enhance the raw material's storability while retaining such components as much as possible, and a defining feature is that the ingredient's natural flavor rises when rehydrated.

💡 TIPS | Drying-processing trivia

Broccoli's fresh green aroma and vivid green color have the characteristic of being easily lost in high-temperature, long-duration heat cooking. Agriture's low-temperature drying uses a process that removes moisture while keeping the aroma and color tone suppressed as much as possible. We finish it into a raw material that makes the most of the vivid green and the ingredient's natural flavor.

Uses for dried broccoli

Dried broccoli is a highly versatile green-and-yellow vegetable raw material that can be used across a wide range of fields—frozen foods, prepared foods, foodservice, and health-conscious menus. It is supported by manufacturers seeking both color and ease of handling.

An ingredient for frozen pasta and frozen gratin

Dried broccoli, which can be stored at room temperature, is prized by frozen-food makers as an ingredient for frozen pasta, gratin, and risotto. Its strength is stable color and floret shape.

A healthy material for soups and potages

It suits raw materials for vegetable soups and potages that make the most of broccoli's natural sweetness. It can be stored long term at room temperature and procured while suppressing price fluctuations by season and growing region, making it an easy material to use in developing instant soups and commercial stock products.

Color for salads, marinades, and deli prepared foods

Dressed with oil or vinegar after rehydration, it finishes into a deli prepared food where the vivid green stands out. Since it is pre-processed with uniform small-floret shapes, it is easy to incorporate into the mass production of products for takeout prepared-food shops and convenience stores.

A topping for pizza and an ingredient for open sandwiches

Used as a topping for pizza or open sandwiches, it easily adds a sense of vegetables and color. Only the needed amount can be used from ambient stock, and since the green color tends to remain even when heated, it is an easy raw material to use as an ingredient for foodservice chains and frozen pizza.

A differentiating material through powder processing

Ground into powder, it becomes a raw material for products that want to emphasize vegetables—green smoothies, aojiru, protein blends. It can also be expanded into health-conscious OEM development.
