Ordinary mini tomatoes generally have a sugar content of around 6–8 degrees, but the "Yarisugi Tomato" reaches 11–12 degrees Brix. Low-temperature drying that maximizes concentration

High-sugar tomatoes have their sweetness concentrated even further through drying. In the drying process for the Yarisugi Tomato, we remove moisture slowly at low temperature, creating a distinctive flavor like a berry-type dried fruit.

💡 TIPS | Drying-processing trivia

As moisture is removed by drying, the sugars and acids in the flesh concentrate. Bring an 11-degree-Brix tomato close to zero moisture, and it theoretically reaches a rich sweetness that feels several times the sugar content. This is why drying the Yarisugi Tomato gives it a flavor like a dried berry.

Use cases

A staple ingredient for Italian cuisine

At Italian restaurants and Western-style delis, it is adopted as a base ingredient for peperoncino, acqua pazza, and chilled appetizers. Fresh tomatoes vary in sugar content and condition from batch to batch and are prone to disposal loss, but dried tomatoes allow stable procurement from room-temperature stock, and because they can be added directly without rehydrating, they keep prep labor down to a degree. With umami and acidity concentrated, adding them to sauces or dressings gives depth of flavor even in small amounts, and the specification is easy to propose as a menu-differentiating ingredient.

Oil-marinated and pickled

This is a use with a track record of adoption as an added-value product ingredient in the OEM development of food processors and EC brands. Fresh tomatoes make moisture control difficult during oil-marinating and require significant labor to keep the finish uniform, but with dried slices the moisture is held down, so they blend into oil more stably and the yield is easier to manage. Because a single ingredient can design multiple SKUs, such as garlic-oil and herb marinades or pickle applications, it is also useful when considering a differentiated lineup in small-lot, multi-variety production.

Compatibility with Japanese cuisine

This is a use suited to prepared-food makers and restaurant chains that want to build it into Japanese and Chinese menus as a differentiating ingredient. Because the tomato's acidity and umami harmonize naturally with miso-, soy-, and chicken-bone bases, it is easy to fold into existing recipes as an ingredient for takikomi rice mixes, miso-soup ingredients, and flavoring for Chinese-style stir-fries. A. You can try it from 100 g. For full adoption, we accept consultations in units of 1 kg and 10 kg.

Q. Can you give me a rough price?

A. Because the raw material is highly rare, the price range runs higher than other dried tomatoes. We will quote it together with samples.

Q. How long is the lead time?

A. Around two weeks for stocked items. For planned production timed to the harvest season, we ask for consultation up to three months ahead.

From the yakuzen perspective, tomato is classified in the "heat-clearing" category. It has long been used as an ingredient that cools heat trapped in the body and helps with summer fatigue, dry mouth, and loss of appetite.
