We Began Prototyping "Yuzu Powder" Using Yuzu Grown in Mizuo, Kyoto

This time, Agriture prototyped a "yuzu powder" made using Kyoto-harvested yuzu from a renowned yuzu-producing area located in Ukyo-ku, Kyoto City.

Kyoto is known as a historic yuzu-producing area dating back to the Heian period, and its terroir—blessed with a climate of large temperature swings and clear water—raises fragrant, high-quality yuzu. Kyoto-grown yuzu, prized even at Kyoto's ryotei, features the strength of aroma and the quality of the peel, and earns high marks as a raw material for processed goods as well.

For this prototype, to lock in the aroma and flavor of this Kyoto-grown yuzu as is, we carefully dried the peel and powdered it additive-free and uncolored. We envision application to a variety of products—foods, beverages, seasonings, sweets, and more.

Kyoto-grown yuzu is a material highly regarded at Kyoto's ryotei, but the harvest volume itself is limited, so early consultation is important to stably source a substantial amount for processing. At Agriture we plan raw-material securing in the pre-harvest season (July–September), and for projects with an annual plan we recommend contacting us ahead of time.

Seasonings and dressings

A use we frequently field inquiries about—as a base material for yuzu ponzu, yuzu salt, and yuzu kosho. Being a powder, it disperses evenly into liquid seasonings, designed to leave few residual grains.

  • Suitable products: yuzu ponzu, yuzu salt, yuzu dressing, yuzu kosho
  • Blending guide: 0.5–3% of the total product
  • Points to note in development: tartness strength varies by lot, so check the balance in a prototype

Confectionery / bakery

It can be used to add aroma to citrus sweets such as yuzu madeleines, yuzu pound cakes, and yuzu macarons. An advantage of the powder type is that the aroma tends to remain even after baking.

  • Blending guide: 3–8 g per 1 kg of flour
  • Points to note in development: pairs well with sugar. In oil-based dough, dissolving it into the oil first makes it even

Beverages, craft drinks

A use where it can serve as a flavor material for citrus beverages such as yuzu cider, yuzu highball, and yuzu latte. Dissolving it into syrup in advance before blending produces a stable aroma.

  • Suitable products: yuzu cider, yuzu latte, yuzu highball syrup
  • Blending guide: 0.1–0.5% of the liquid volume
  • Points to note in development: it doesn't fully dissolve, so a settling design needs to be considered

Tea / blended tea

Q. Can it be limited to Kyoto-grown?

A. Yes. However, since Kyoto-grown yuzu is limited in harvest volume, for projects with large annual requirements, consulting us by the pre-harvest season (July–September) makes stable securing easier.

Q. Can it be blended with other citrus powders?

A. Yes. We can propose blend designs with citrus powders such as lemon, mikan, and shikuwasa, or with other materials fromVegetable powder list.

Q. Can you issue a raw-material origin certificate?

A. We issue both a certificate of origin proving the material is Kyoto-grown yuzu and a microbiological test report, in consultation on a per-project basis.

Q. What's the lead time?

A. When in stock, shipment is possible in 2–3 weeks. Kyoto-grown involves preparation timed to the November–December harvest, so please plan large lots half a year in advance.
