This morning, we take note of the activities of "OYAOYA," an upcycle brand launched in Kyoto. "Upcycling" reborns what already exists into something better. At OYAOYA, out-of-spec vegetables that don't reach the market because they "look bad"—grown too large, misshapen, blemished…—are upcycled into "dried vegetables," where looks don't matter.
We asked OYAOYA representative Rei Kojima about the current state of out-of-spec vegetables and the spark that gave rise to this idea.
