The growing inbound tourists and vegetarian accommodation

Japan's tourist destinations, Kyoto included, are visited by many inbound tourists. Not only tourists from East Asia but visitors with various food cultures from Europe, America, India, and the Middle East come. However, vegetarian accommodation in Japan is not sufficient, and voices of dissatisfaction exist.

In a survey we conducted ourselves, there was also an opinion from an Indian visitor that "it's hard to eat at restaurants because vegetarian labeling and ingredient information are unclear."

"Tomato ends" perfect for vegetable dashi

Dashi is part of Japanese food culture and is used in various dishes. Using vegetable dashi makes it possible to develop menus and serve dishes that accommodate vegetarians while preserving the goodness of Japanese culture. Dashi dried tomato can, of course, be cold-brewed or decocted like konbu or shiitake, and can also be steeped in miso to make a vegetable miso that draws out tomato's umami.

The raw material uses large-fruited tomatoes grown in Kyoto, and because they have not just sweetness but acidity too, using them as dashi can deepen the flavor of a dish. In tests conducted with general users, tomato dashi — with a hidden sweetness sleeping within the sweetness — becomes an accent in dishes, active not only in soups like miso soup but even in sweets.

Also, because it processes the "tomato ends" — usually discarded during processing — by upcycling them, it also leads to reducing food loss.
