Agriture Inc. | Turning off-spec vegetables into dried vegetables. For the sustainable agriculture we want to see beyond that!

Have you ever used kiriboshi daikon—a traditional preserved food whose crunchy texture is an accent—in your everyday cooking? Despite being an easy, healthy ingredient, isn't it becoming an unfamiliar one for younger generations?

In northern Kyoto, there is a company that faces sustainable agriculture through these dried vegetables (hereafter, dried vegetables). The trigger for the business was one of the challenges farmers face: large volumes of off-spec vegetables.

Agriture Inc. utilizes off-spec vegetables that were destined to be discarded, and continues to convey the appeal of vegetables and agriculture. We spoke with CEO Kojima about the company's journey so far and its future developments, as it has just entered its third year since founding.
