Low-temperature drying

An intermediate method between sun-drying and hot-air drying, taking time to dry at a low temperature of 30–50°C.

Freeze-driedis ideal. It combines all three—lightweight, long-term storage, and instant rehydration. That said, the cost is on the higher side.Since even hot-air-dried keeps for 6 months or more, hot-air drying is sufficient if you assume rolling stock

As a raw material for commercial and processed foods

hot-air dryingis the industry standard. Large-volume sourcing is possible and the cost is stable. If you prioritize quality, low-temperature drying is also an option.

Check 1: Ingredient label

Ideally only “vegetables” is listed. Avoid products containing coloring or preservatives.

Check 2: Origin

If you insist on Japanese-grown ingredients, confirm the origin label. Note that “made in Japan” and “Japanese-grown ingredients” mean different things.

Check 3: Statement of drying method

A product that states the drying method on the package is a sign of confidence in its quality. If it isn’t stated, try asking the maker.

Overall they’re roughly equal. Sun-drying has the advantage of increasing vitamin D, but quality varies widely. Hot-air drying offers stable, reliable quality. Since there’s no major nutritional difference, choosing by application and budget is recommended.

Q2: Is freeze-dried really that expensive?

Comparing the same vegetable, 3–5 times hot-air drying is the going rate. For example, if dried spinach is 500 yen per 100 g by hot-air drying, freeze-dried would be around 1,500–2,500 yen.
