We Produced 1 cm Cut Kujo Green Onions
Agriture has produced 1 cm cut Kujo green onions. Dried green onions are generally distributed finely chopped, mainly serving to add color and aroma floating in soups. This time we took the opposite approach, deliberately cutting them into larger 1 cm pieces aiming for a size that lets you taste the green onion itself when you bite into it.
Kujo green onion is a green onion with one of the longest histories among Kyoto vegetables, known for having almost no sharpness and a sweet umami compared with ordinary green onions. This character cannot be fully brought out in finely chopped forms that use only the aroma. Keeping the pieces reasonably large lets you taste the silky texture and sweetness inside the leaves when rehydrated, making it an ingredient with presence. We handle everything from cutting to drying at our own processing facility in Kyoto Prefecture.
Uses That Change with Cut Size
Even with the same Kujo green onion, its role in a product changes with the cut size. Deciding what role it will play at the prototype stage makes it easier to design the amount used and how it is rehydrated.
- Fine cut (a few mm): adds aroma and color. Garnish packets for instant noodles, furikake, toppings
- 1 cm cut: presence as an ingredient. A starring ingredient in soups, rice bowls and prepared dishes
- Powder: a blend ingredient that spreads flavor and aroma evenly. Soup bases, kneading into doughs, seasonings
The 1 cm cut is a size where, once rehydrated, you feel you are eating green onion rather than that there is green onion in it. This form pairs well with products that want to raise satisfaction without adding more ingredients, and with products that want to promote the origin of their ingredients.
Products Where the 1 cm Cut Shines
Here are the directions we are most often asked about at Agriture for larger-cut Kujo green onions.
- Garnish for cup noodles and instant noodles (premium lines that want more substantial ingredients)
- Instant soups that are not freeze-dried
- Rice bowl ingredients (as both condiment and ingredient for oyakodon, gyudon and the like)
- Souvenirs and gift products promoting Kyoto origin and Kyoto vegetables
- Pre-prepared ingredients for commercial prepared dishes and institutional meals
- Lightweight vegetable ingredients for outdoor use and emergency food
Because the label "made with Kujo green onions" itself differentiates a package, it is a raw material that pairs well with product designs that put the ingredient's name up front.
About the minimum prototype lot and processing facility
We accept prototype orders from 1 kg of raw material. You can also test different cut sizes in parallel, so you can decide on specifications while comparing appearance and texture in the final product. Full production starts from 10 kg, and purchase lots, lead times and packaging formats are worked out through individual consultation.
Processing takes place at our own facility in Kyoto Prefecture. The best-before date is about 6 months from shipping, and we can handle commercial bulk, small bags and light-blocking packaging. Larger cut sizes change drying time and the moisture balance of the finished product, so when the size is changed, drying conditions are adjusted accordingly.
Combining with Other Green Onions and Kyoto Vegetables
Kujo green onion can be used on its own, but combining it with other green onions and Kyoto vegetables broadens the product range. You can also consult with us on choosing among them by use and price range.
