We Made a Prototype of Green Pepper Powder Using Japanese-Grown Green Peppers
Agriture has made a prototype of green pepper powder using Japanese-grown green peppers as the raw material. When we previously carried out a prototype of dried green peppers, we mentioned the possibility of powdering in addition to the chip-style finish, and this time, as a continuation, we are working on a powder-specification prototype taken all the way through the grinding process.
For this prototype, green peppers dried at low temperature at our own processing facility in Kyoto Prefecture were ground directly into a fine powder. As the photo shows, the result is a bright yellow-green, and the characteristic green aroma of peppers remains clearly even in powder form. As chips, the main use was to show that vegetables are included, but as a powder it can be used in an entirely different way, as a blend ingredient that spreads color and aroma evenly.
- Green pepper powder: making use of color and green aroma
When peppers harvested green are powdered, they take on a bright yellow-green color derived from chlorophyll. This specification suits cases where you want a natural green from kneading into dough, or want to add vegetable flavor to a soup or potage base. The color tone softens somewhat after heating, so the blend ratio is adjusted to match the heating conditions of the final product.
- Red pepper powder: as a natural red ingredient
When fully ripened red peppers are powdered, they take on a vivid red color derived from carotenoids. This specification is often used in consultations about replacing imported paprika powder with Japanese-grown raw material. It is sweeter than the green version and has almost no bitterness, which also makes flavor design easier.
Choosing Between Chips and Powder
Even with the same peppers, the approach to product design differs between chips and powder. Deciding which will be the star at the prototype stage allows a design worked backward from the drying conditions.
- Chips (slices): for uses that want to show the presence of vegetables. Ingredients in prepared dishes, curries and stir-fries, and mixed vegetable chips
- Powder: for uses that want to spread color and aroma evenly. Kneading into dough, soup and sauce bases, seasonings, dressings
- Both together: a design that uses chips as an ingredient and powder for base coloring within the same product
Powders tend to absorb moisture, so blending powders together and filling require a design that includes storage conditions. We recommend moving specifications toward the final product's production line from the prototype stage.
OEM and Product Development Ideas Using Green Pepper Powder
Green pepper powder is an ingredient that brings in vegetable-derived color and flavor at the same time. Here are the directions we are most often asked about at Agriture.
- Seasonings and spice mixes committed to Japanese-grown raw materials (as a substitute for paprika powder)
- Products for children who dislike vegetables (designed so vegetables can be eaten kneaded into bread or cookie dough)
- Base raw material for soups, potages and pasta sauces
- Color and flavoring for dressings and dipping sauces
- Vegetable powder blends (colorful mixes combined with tomato, carrot, pumpkin and others)
- Natural coloring ingredient for food brands that claim no additives and no artificial coloring
Its ability to deliver color and flavor without colorings or flavorings makes it an ingredient that pairs well with brands that want to keep their ingredient labels simple.
About the minimum prototype lot and processing facility
We accept prototype orders from 1 kg of raw material. You can also test green versus red and chips versus powder in parallel, so you can consult with us from an early stage before your product concept is settled. Full production starts from 10 kg, and purchase lots, lead times and packaging formats are worked out through individual consultation.
Processing takes place at our own facility in Kyoto Prefecture. The best-before date is about 6 months from shipping, and we can handle commercial bulk, small bags and light-blocking packaging. Delivery pre-blended with other vegetable powders can also be discussed.
Combining with Other Vegetable Powders
Green pepper powder can be used on its own, but combining it with other vegetable powders broadens the product range. A strength is that mix designs with coordinated colors and combinations that round out the flavor base can be handled together through a single raw material supplier.

Agriture also handles drying and powdering OEM for vegetables, including Japanese-grown green peppers, and prototypes of commercial raw materials.
