What is sustainable hotpot?

"Sustainable hotpot" is an initiative for hotpot dishes packed with ideas to solve the challenges surrounding our food. Hotpot is a dish essential to Japan's food culture, able to draw on food materials by region and season. Nippon Food Shift promotes sustainable hotpot from perspectives such as the following.

• Hotpot using food materials harvested in regions across Japan
• Hotpot using organic produce, produce with the Mieru Label, and the like
• Hotpot using local flavors and recipes handed down over time
• Hotpot using off-grade vegetables, foods nearing their best-before date, and the like
