サステ鍋とは
「サステ鍋」とは、私たちの食を取り巻く課題を解決するアイデアが詰まった鍋料理の取り組みです。鍋は地域や季節ごとの食材を活かせる、日本の食文化に欠かせない料理。ニッポンフードシフトでは、以下のような視点でサステ鍋を推進しています。
- 日本全国の地域で採れた食材を使用した鍋
- 有機農産物・みえるらべる取得農産物などを使用した鍋
- 引き継がれてきた郷土の味やレシピを使用した鍋
- 規格外野菜や賞味期限が近づいている食品などを使用した鍋
