Tea Recipe Development | Turning your farm produce into a blend that tastes good

Turning the produce you bring us
into tea that tastes good.

You supply the raw materials. We take care of drying, blending, prototyping and tea bag filling. "The ingredients are decided, but the flavor isn't" — that is a fine place to start.

You can ask us for flavor development alone

Contract processing and recipe development for those who already have raw materials.

Order just the flavor work

How to combine things so the tea tastes good when you drink it — you can ask us for that part alone. If your blend is already set, we can also handle just the blending and filling.

Send it to us straight from the harvest

We receive produce fresh and set the drying temperature and time for each item. We accept from 10 kg. The drying equipment is our own.

When one ingredient isn't enough, we add to it

Sometimes the ingredient alone tastes watery, or it has aroma but no body. In those cases we round it out with dried vegetables, dried fruit or base teas from our stock.

A Kujo green onion tea was recognized at the Nihoncha AWARD.

We were involved in its development. We have also made vegetable teas using Kyoto vegetables and fruit teas using dried fruit. Turning vegetables into tea and taking it all the way to something that tastes good — that is our strength.

Flavor is decided in this order

"Made with local ingredients" alone won't get anyone to pour a second cup. We take on the four steps needed to make a cup people actually want to drink.

01

First, put into words how you want it to taste

Clean. Toasty. A lingering sweetness. We describe how the finished tea should drink before anything else. If this stays vague going into prototyping, there is no way to judge what works and the number of rounds just keeps growing.

02

Change the drying method and see how the aroma comes out

Even with the same ingredient, temperature and time change the aroma and astringency. We test different conditions on the material you send and pick the one that best brings out its character.

03

Decide what to pair it with

When the main ingredient falls short on its own, we build structure by adding a base tea such as Japanese black tea, hojicha, green tea or rooibos, or another ingredient. Whether to make it caffeine-free is also decided at this step.

04

Taste and refine

We prototype several patterns with different ratios and narrow them down by actually drinking them. Prototypes can be made in small quantities.

Raw materials you can bring

These are the categories of items we have handled so far. For anything not listed, we can judge once we hear about its condition.

Leaf-and-stem vegetable
Kujo green onion, Japanese parsley (seri), shiso (oba)
Aroma is easily lost, so we set the drying method for each item
Root and tuber vegetables
Burdock, carrot, kabocha squash
How far they are dried changes how the sweetness comes through
Fruit
Yuzu, apple, pear, strawberry
Peel and flesh release aroma differently
Herbs & Edible Flowers
Lemongrass, chamomile, rose
Easy ingredients for caffeine-free blends
Grains and beans
Rice, corn, azuki beans, edamame
Ask usThese ingredients get their flavor from roasting. We don't do roasting, so we decide how to proceed after hearing about the condition of the raw material and the finish you are aiming for

What we can't do

It saves time to say this up front. For projects that need these, we will suggest a different approach from the start.

Sourcing raw materials

Please supply your own raw materials. We do not purchase from growing regions or coordinate with producers.

Roasting

We have no roasting equipment. For ingredients that require roasting, let's talk about how to proceed.

Formulations targeting specific components

We do not create formulations aimed at specific amounts of components such as GABA or caffeine.

Nine questions show which steps you need

You'll see right away what we handle and what you would prepare yourself. Specifications and quantities can still be undecided.

Start the check

From inquiry to delivery

Inquiries

Knowing two things — the raw material and roughly when you want the product ready — helps things move quickly.

Consultation

By phone or online, we ask about the raw material, target flavor, expected quantity and timing.

Prototyping

We receive your raw material, test drying conditions and send you prototypes in different patterns.

Full production

Once the blend is settled, we provide a quote and proceed to filling and packaging.

FAQ

Here are questions we often receive.

If I bring my own raw materials, can I ask for flavor development only?

Yes. You supply the raw materials and we take it from flavor development. Recipe development is 150,000 yen per recipe, covering a hearing on the target flavor, study of drying conditions and blend design. Please arrange the raw materials yourself.

What if my blend is already decided?

There is no recipe development fee. You supply the raw materials and we handle only blending and tea bag filling. If the blend needs to be checked, prototyping is quoted separately.

Can you make tea from rice, corn or azuki beans?

These ingredients get their flavor from roasting, so let's discuss how to proceed case by case. We have no roasting equipment, so we decide after hearing about the condition of the raw material and the finish you want. We do handle drying, blending and filling.

Can I send vegetables or fruit straight from the harvest?

Yes. We receive them fresh, set the drying temperature and time for each item and finish them as tea material. We accept from 10 kg. We schedule around your harvest, so please contact us once the timing is set.

Can you also find suppliers for raw materials?

We do not source raw materials or arrange growing regions. If you want to decide starting from the ingredients, see our tea OEM service, where we make proposals from our stock.

What is the minimum lot?

Production tea bags start from 500 bags, and supplied raw materials from 10 kg. The minimum can shift depending on bag specifications, so we give an exact quantity once specifications are settled. Prototypes can be made in small quantities.

Neither specifications nor quantities are decided yet. Can I still ask?

Yes, you can start at that stage. If you first want to know which steps you need, the 9-question suitability check shows what we handle, what you would prepare and a rough cost estimate.
