Kyoto Mizuo yuzu

Kyoto’s Mizuo is a nationally famous “village of yuzu.” Nurtured by the temperature swings of the mountains and pure water, Mizuo yuzu has a very strong aroma and thick peel. Just splitting open a single segment sends a gorgeous fragrance rising, and it has long been beloved in Kyoto cuisine.
The peel is rich in essential oils, with a good balance of refreshing tartness and gentle bitterness, and pairs excellently with processed products. Careful hand harvesting and selection continue to this day, and it boasts top-class quality as a raw material for dried yuzu and yuzu peel.

What is the difference between dried vegetables and freeze-dried?

Dried vegetables are often made by removing moisture at low temperature, so a firm texture remains. Freeze-dried vegetables, on the other hand, are frozen rapidly and then dried, giving them a light, crisp texture. The key is the difference in flavor and texture.About the difference from freeze-dried

Do you use glucose or other additives?

Agriture’s dried yuzu is additive-free and without coloring. To showcase the flavor of the yuzu itself, we use no unnecessary additives whatsoever.About glucose in dried vegetables

What are the differences in aroma and taste between dried yuzu and fresh yuzu?

In dried yuzu, moisture is removed, so the aroma components are tightly concentrated, and the aroma stands up firmly with a smaller amount than fresh yuzu. With a good balance of faint bitterness and tartness, a feature is that it is easy to handle in confectionery, tea-leaf blends, seasonings, and more.Product development using yuzu

Are there differences in flavor or use between yuzu peel and pulp?

Yes. Yuzu peel contains a lot of the essential oil that is the main aroma component, making it ideal for aroma-focused uses (toppings, tea, dressings, seasonings). When the pulp part is included, the tartness becomes stronger, so it is suited to jams and beverages.About using yuzu peel

Can you customize the shape—slice, chopped, powder, and more?

How consultation works

Scrollable

Inquiry / materials request

First, please feel free to contact us via the inquiry form or by phone. We welcome you even at the stage of “I want to know what kind of processing is possible” or “I want a rough idea of the price.” After you contact us, our staff will send you materials and take time to hear about your situation.

If you can give us a rough idea of the raw materials you currently have, the product image you are aiming for, and your sales destinations, our subsequent proposals will go smoothly. Please feel free to reach out with the mindset of simply “giving consultation a try.”

Consultation / meeting

Based on the content of your inquiry, we will talk in detail with our staff. Online or by phone, we carefully ask about points such as “what ingredients you want to use,” “what kind of product you want to make,” and “what your sales destinations and expected lots are.” At this stage, it is fine if some things are undecided.

While introducing the ingredients we handle and our processing track record, we will organize the direction together. As needed, we will also present proposals for processing methods and specifications and a quote at this time.

Prototype production / sample shipment

Based on the content of the consultation, we actually produce samples. While adjusting fine specifications such as drying temperature, cut size, and blend ratio, we aim for a finish close to your image. After you review the sample, we repeat prototyping multiple times as needed, incorporating feedback such as “make the texture a little softer” or “make the color more vivid.”

We handle this carefully until the finish is satisfactory, so even those tackling product development for the first time can feel at ease. We will inform you of the prototyping cost in advance.

Full production / product development

Based on the specifications confirmed in prototyping, we begin full production. After finalizing the production quantity, delivery date, packaging specifications, and more, we adjust the schedule. We maintain thorough quality control during production and respond with a consistent management structure so there is no unevenness in the finish. Finished products are inspected and delivered in the specified format.

Even after the first production, we flexibly handle requests for additional orders and specification changes, so we have a structure in place for a long-term partnership. Please feel free to consult us about lot adjustments to match sales after commercialization.
